My hubby uses 1/4 cup just like the bag says and it makes 2 perfect pancakes. So I sometimes will have 2 of them with either ghee or some Nutiva butter flavored coconut oil on them and drizzled lightly with Walden's syrup for breakfast with 2 eggs and a slice of turkey bacon. But that's a big breakfast for me. I mostly use these as my evening snack with a cup of berries. Hubby makes them ahead and they are great in a zip lock bag in the fridge-no need to put parchment between them or anything, just cook 'em, cool 'em and put them in ziplock. Anyhoo, he takes one out for my snack, pops it in the microwave for 10 seconds (doesn't dry them out, so no damp paper towel needed) and then schmears almond butter (I use Artisana Organics) on it. I eat it with a fork and tastes great with fresh berries. Or whatever your heart desires. This tastes like a treat and along with some lovely chamomile tea, sets me up for a comfy night's sleep without feeling hungry or having my blood sugars dipping too low. I'm a huge fan and so happy with this product. Coming back to order more.A friend of mine mentioned she had tried (and loved) this Birch Binder Paleo Pancake & Waffle mix so even though it is expensive - I am gluten-free and I get it... you simply cannot compare to gluten versions... but still... typical wheat-based pancake mix can be had for 7¢ an ounce! Anyway... I decided to give it a try. I bought in May 2020, stuck the bag into the cupboard and kind of forgot it until a few months later bought a pink Dash Mini 4" Waffle Maker and remembered the mix.Recommended RecipeTried the recipe as recommended on the package a few times, it's super simple, you just add water if you are making pancakes. If making waffles it is recommended to add a small amount of fat - they like coconut oil. The waffles were amazing. There is a slight sweet taste due to the Monkfruit (last ingredient), which is tolerable when having these drizzled with butter and scrambled eggs on the side. Just two of these 4" waffles are filling and satisfying (that surprises me and makes me happy all at once). By the way, even though I had the mix probably six months before opening it is fresh and delicious.Keto vs. PaleoFull disclosure, I have not tried the Keto version yet. I'd prefer less carbs, but the Keto version (10 grams carbs per serving) is currently 65¢/ounce whereas the Paleo (16 grams carbs per serving) is 41¢/ounce. After thinking about it, I decided paying less was worth a few more carbs. I see that the Keto version doesn't contain the Monkfruit so I might like the Keto version better. The Paleo version has Cassava starch, Coconut Flour and Almond Flour, while the Keto version has Almond Flour, Cassava starch and Tigernut Flour.Buttermilk Waffle RecipePaleo omits dairy... so if you are strict Paleo you won't be able to try this. My husband (the bargain shopper) bought three half-gallons of buttermilk because they were marked down to just 50 cents. When I used to eat gluten, buttermilk pancakes were a huge favorite so I thought I'd try the Birch Binders mix with buttermilk. The recipe is equal parts of the Paleo pancake mix, and buttermilk. so for one serving (two waffles) 1/4 cup mix and 1/4 cup buttermilk. Mix together and it forms a thick batter. You might need to add a tablespoon (or more) of buttermilk to thin it out a bit. The Dash mini-waffle maker is non-stick surface but I still brush the surface with coconut oil or butter. I snapped a photo of the batter after I plopped it onto the waffle iron before closing it so you can see it is pretty thick. Ohhhhhh... what a wonderfully delicious waffle this makes. If you can have dairy products, you should definitely try it. It has been a really special treat. So fast! I plug in the waffle iron and while it's heating up, mix up the batter. I usually wait until the waffle maker light goes off, and steam rising reduces significantly to check and see if the waffle is done. In between checking the waffle iron I'm scrambling the eggs so everything is ready to eat in minutes.I have the three flours on hand so maybe will try putting together a DYI version but in the meantime I have been having these with scrambled eggs (and grated mild cheddar) several times a week (see picture). Really delicious and fills me up for several hours.I would definitely recommend Birch Benders Paleo Pancake and Waffle mix, especially if you are the only person you're making food for, the small bag (12 ounces) makes 10 servings (20 pancakes or waffles) so the bag could easily last a month or two depending on how often you get a craving.Makes wonderful peachy nut pancakes while camping. Just add water. Open can of peaches.. heat and thicken with a little coconut brown sugar. Yum..yum..I added walnuts.. flaxseed. .nut butter..the list goes on depending what u have on hand.We cook on a 350 griddle and use coconut oil as recommended. I'd say make a thinner version for best flavor... the inside texture doesn't hold up as well if I make them thicker.I purchased two bags of this mix at first. I have now come back for three more bags. I really enjoy havingthem for breakfast. Now I have more choices for my morning meal. I add half Almond Milk and Half and Half instead of water. Instead of making 2-3 small pancakes, I opt for 1 larger pancake with butter and sugar free maple syrup to go with my bacon. I don't know what some reviewers expected from a Paleo/Low Glycemic batter mix, but I'm very satisfied with this brand and enjoy eating these delicious pancakes. If you want the 'real thing', then go buy the 'real thing' and enjoy it. If you're watching your diet and nutrition, then buy these and enjoy. Sprinkle a little nutmeg and cinnamon in the batter for a delicious twist of flavor.I make these with half of the water called for and the other half replaced with kefir (liquid yogurt). It gives them almost a cheesy taste like if you’ve ever had rolls with cheese baked in. You can just eat them with nothing on them and they’re good. These are very reasonable re: carbohydrate content, especially for delicious pancakes, and have a fair amount of protein which makes for a nice balance of macronutrients. I typically make one batch just for myself according to the instructions which is more than a serving but I feel great and don’t get a carbohydrate crash from them.I have used this item for a number of years now and it is just great. I do not eat grains and this is a really good replacement for this. I make waffles and sometimes pancakes, but the waffles are mostly what we are looking for. It is honestly great and tastes just about like the "real" stuff.I haven't used this product yet, but it looks good.Very easy to prepare and pancakes turned out really fluffy. Cooked them on one side till they bubbled before flipping them over for a minute. The batter spreads out as it cooked so a full pack (plus 2 & 3/4 cups of water) yielded me about 10x 4”-5” pancakes. I’ve tried other (low carb) pancake recipes, they worked but this ones gonna save me a lot of time now.Thus is my absolute favourite gluten free pancake mix. I add some chocolate chips and sugar free maple syrup. It has excellent macros as well.Great option if you want a pancake minus the sugar wheat and any other toxic ingredients usually present in pancake mixes. We loved it!It never gets cooked through and the texture is just funky. Not something I'd call a pancake. There goes my money, but please really, this product is just bad....It contains too much sodium. Over-salted waffle mix.
